Bolenius Restaurant first opened its doors at the end of 2010. With this restaurant, we have chosen to have the focus be on a contemporary and healthy kitchen, where we use local, quality ingredients. We have named our kitchen New Amsterdam, where we use cutting-edge cooking techniques with an emphasis on vegetables and seasonal products. We get inspiration from all around the world and apply it in our minimalistic kitchen with a Dutch spin on all of our dishes.
With our New Amsterdam kitchen, we want to show our guests that food can be both healthy and flavourful,, and that traditional Dutch flavours are surprisingly contemporary.
